When you look at organic food, and put it back on the shelf as too expensive, console yourself with the thought that 40 - 60 percent of all the nitrogen in your body comes from ammonia synthesised by the Haber Bosch industrial process. Well over 160 million tonnes per year are produced, largely for fertiliser. Paying a premium price for the other 60 - 40% of your nitrogen seems rather pointless.But the freedom to be irrational is an important freedom.
